Tofu is made from soybeans, and its history stretches back over two thousand years in China, where it is traditionally credited to the Han dynasty. The process is surprisingly simple: dried soybeans are soaked, ground with water, boiled and then coagulated, much like cheesemaking. The curds are pressed into blocks, and the firmness depends on how much whey is squeezed out. Today it is a daily staple across much of East and Southeast Asia.
Russia has held the top spot among diamond producers by volume for years, thanks largely to the mines of Yakutia in Siberia, where extraction began in the 1950s. Botswana, however, is often the leader by value, since its stones tend to be larger and higher quality. The Democratic Republic of Congo also ranks high in output. Virginia Woolf published Night and Day in 1919. It is often overshadowed by her later, more experimental works such as Mrs Dalloway and To the Lighthouse, because it follows a more traditional Victorian-style structure. The novel contrasts two women - the practical Katharine Hilbery and the romantic Mary Datchet - against the backdrop of suffragette-era London. Woolf was also a central figure of the Bloomsbury Group.
Bob Dylan received the Nobel Prize in Literature in 2016, an award that sparked plenty of debate. The Swedish Academy honoured him "for having created new poetic expressions within the great American song tradition." Dylan was the first musician to win the literature prize, and he initially stayed silent about it for weeks. He eventually accepted the medal in a private ceremony in Stockholm the following year.
The Kremlin in Moscow is both a historic fortified complex and the official residence of the Russian president. Its red brick walls and onion-domed cathedrals sit beside the Moskva River, facing Red Square. Sarajevo, meanwhile, is the capital of Bosnia and Herzegovina and is often called the "Jerusalem of Europe" for its mix of mosques, synagogues and churches within a small area. Both cities carry layers of empire, conflict and rebuilding.
